What to make with a basket of fresh eggs

One of the best problems a backyard flock gives you is too many eggs. Here are the crowd-pleasers we come back to, from a two-minute breakfast to a whole meal in one pan. Fresh eggs make every one of them better.

Egg in a Hole

The easiest way to show off a fresh yolk. Kids love making it.

You'll need

1 slice bread · 1 egg · Butter · Salt & pepper

Make it
  1. Cut a circle out of the center of the bread with a glass.
  2. Melt butter in a pan over medium heat and lay the bread down.
  3. Crack the egg into the hole; season.
  4. Cook 2–3 minutes, flip, and cook 1–2 more until the white is set but the yolk still runs.

Eggs Benedict

The Sunday classic. A fresh egg poaches into a tight, beautiful shape.

You'll need

2 eggs · 1 English muffin · 2 slices Canadian bacon or ham · Splash of vinegar · Hollandaise (below)

Make it
  1. Bring a pot of water to a bare simmer, add a splash of vinegar.
  2. Swirl the water, slip in each egg, and poach 3–4 minutes.
  3. Toast the muffin, warm the ham, stack muffin, ham, then egg.
  4. For quick hollandaise, blend 2 yolks, a squeeze of lemon, and a pinch of salt, then drizzle in a stick of melted butter until thick. Spoon over and serve.

Classic Deviled Eggs

A party staple, and a great use for a dozen at once.

You'll need

6 eggs · 3 tbsp mayo · 1 tsp mustard · Splash of vinegar · Paprika

Make it
  1. Hard-boil the eggs (12 minutes), cool in ice water, and peel. Tip: eggs a week or two old peel more easily than truly fresh ones.
  2. Halve them, pop the yolks into a bowl.
  3. Mash the yolks with mayo, mustard, vinegar, salt, and pepper.
  4. Spoon or pipe the filling back in and dust with paprika.

Farmhouse Frittata

The catch-all. Whatever's in the fridge plus a big handful of eggs.

You'll need

8 eggs · Splash of milk · 1 cup chopped veg (peppers, onion, spinach) · 1/2 cup cheese · Oil or butter

Make it
  1. Heat oven to 375°F. Whisk the eggs with milk, salt, and pepper.
  2. In an oven-safe skillet, sauté the veg until soft.
  3. Pour in the eggs, scatter the cheese, and cook 2 minutes on the stove.
  4. Move the skillet to the oven for 10–12 minutes until puffed and set. Slice like a pie.

Shakshuka

Eggs poached in a spiced tomato sauce. A whole meal in one pan.

You'll need

4–6 eggs · 1 can crushed tomatoes · 1 onion & 1 pepper, diced · 2 cloves garlic · Cumin, paprika, salt

Make it
  1. Sauté onion and pepper until soft, add garlic and spices for a minute.
  2. Pour in the tomatoes and simmer 10 minutes until thickened.
  3. Make wells in the sauce and crack an egg into each.
  4. Cover and cook 5–8 minutes until the whites set. Serve with crusty bread.

Perfect Soft-Boiled Eggs

When the eggs are this good, sometimes simple is best.

You'll need

Eggs · Water · Salt · Toast for dipping

Make it
  1. Bring water to a gentle boil.
  2. Lower the eggs in with a spoon and set a timer for 6 1/2 minutes.
  3. Move to ice water for 30 seconds, then peel or serve in an egg cup.
  4. Crack the top, salt, and dip your toast into that bright fresh yolk.
